Homemade Pizza – Great to Make with Children

For the Base

8 oz Self Raising flour

2 tbsp olive oil

Pinch sea salt and freshly ground black pepper

150ml milk approx. (enough to mix to a soft dough)

1 tbsp mixed herbs optional

For the Topping

2-3 tbsp sundried tomato pesto

1-2 balls mozzarella

Few fresh basil leaves

Drizzle of olive oil

Method:

Preheat the oven to 200c/400f/Gas Mark 6/AGA Roasting Oven or Simmering Plate

To make the base: toss the flour, salt, pepper and herbs into a large bowl, add the olive oil and then mix to a soft dough with the milk.  Do not add all the milk at first, just adding enough.  (If you add too much you can always add more flour.)  Knead the dough lightly then roll out to a large round, or 2 small rounds depending on the way you like it.

Once the base is rolled, place on a piece of bake-o-glide and then proceed to spread the pesto on top, then add the cheese and herbs finishing off with a drizzle of oil.

To cook, place the pizza on bake-o-glide and place on a baking tray and cook for 15 minutes or until the cheese is melted and the base cooked.  Sprinkle over some rocket.   It makes great finger food.
